The word Yucateco is a regional identifier, used to refer to the people and culture of Mexico’s Yucatán Peninsula. El Yucateco sauces have been made there for over fifty years, from peppers growing in the habanero and annatto fields belonging to the Gamboa family. The company’s slogan is “You Get More Habanero,” and they’re not kidding around. Yucateco’s Habenero Red variety clocks in at about 6,000 SHU—around twelve times hotter than Frank’s RedHot—and its Green at around 8,500, meaning a dab is all it takes to feel the kick of these pulpy table sauces. In addition to the classic varieties, Yucateco’s lineup includes five newer sauces, including an extra-hot called “Kutbil-Ik” made with a 90 percent concentration of habanero peppers. The recipe harkens back to the ancient Mayan culinary traditions of the Yucatán—kutbil-ik comes from the Mayan word for “crushed chili.”
El Yucateco is the number-one-selling habanero sauce in the United States, yet it still may be hard to find at your local grocery chain. Seek it out at a Latin market or taqueria, or purchase a bottle online. The company recently started pilot testing its sauces in the Middle East; word is still out on whether it will catch on there.
